Choose skewers, whether of metal or wood, that are either square or oval so that as the food softens in cooking, it will not slip when you turn the skewers. Soak wood skewers in water for an hour before using. If using a grill, grease or oil the rack and place the skewered food over medium heat. Turn the skewers often. Food grilled in this way may take anywhere from 6 to 12 minutes. If cooking skewers in an oven, broil on a greased baking sheet about 3 inches from the source of heat.
