Roasted Red Potato Halves

Savory rosemary seasons roasted red potato halves that oven brown to a crisp with soft creamy centers. Joy’s red potato halves are a unique and delightful side dish that can inspire many of the items in the Joy line as well as any dish you create.

What You'll Need

 

1/3 cup cucumber slices

1/3 cup Cherry Tomatoes (halved)

1/4 cup Celery (sliced)

2 Tbsp. Pesto

2 Tbsp. Italian Dressing

1 Tbsp. Green Onions (sliced)

1 tsp Parmesan Cheese (shredded)

 

Instructions

 

Cook Red Potato Halves as directed.  Let cool in refrigerator.  In mixing bowl, combine Potatoes, Cucumbers, Tomatoes, and Celery.  Add Pesto and Italian dressing.  Mix gently and evenly.  Garnish with Green Onions and Parmesan Cheese.

COOKING GUIDELINES
For food safety and quality, follow these cooking instructions. Cook thoroughly to at least 160°F before eating. Promptly refrigerate unused portions.
 
Ovens vary. Cooking times and oven temperatures may need adjustment.
 
RECOMMENDED: CONVENTIONAL OVEN
Preheat oven to 400°F. Pour potatoes onto baking sheet and bake for 40-50 minutes.   Carefully remove from oven. Let stand 2-3 minutes before serving. Optional: toss with 2 Tbsp. Olive Oil before baking.
 
SECONDARY: MICROWAVE OVEN (1200 Watt)
Place contents on microwave-safe plate. Cover with a paper towel and cook on HIGH for 5-7 minutes. Let rest in microwave 2-3 minutes. Carefully remove from microwave and serve.
 
CAUTION:  DO NOT COOK IN BAG.
